Chicken Piccata

I absolutely love chicken piccata; however, finding it gluten-free in a restaurant almost never happens – unless you were dining in my ole’ Pinewood Kitchen. Capers are considered a majorly important anti-inflammatory food. I love to serve this over roasted cauliflower and with zucchini noodles instead of pasta.

Ingredients

  • 3 tablespoons 1-1 gluten-free, low fodmap flour blend*
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 4 boneless, skinless chicken breasts**
  • 2 teaspoons extra-virgin olive oil or avocado oil (it does not contain fodmaps)
  • 1 teaspoon vegan butter, grass-fed butter, or ghee – depends on your gut needs
  • 2 tbsp of garlic-infused olive oil 
  • ¾ cup organic Chicken Bone Broth or Vegetable Broth – make sure it doesn’t contain garlic & onions – if store-bought. 
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh Italian parsley
  • 1 tablespoon drained capers 

Instructions

  1. In a shallow dish, combine the flour, sea salt, and black pepper. Reserve 1 tablespoon of the mixture; set aside.
  2. Pound the chicken to ½-inch thickness between sheets of parchment paper with the flat side of a meat mallet or a rolling pin. Coat the chicken with the flour mixture, shaking off excess.
  3. In a large nonstick skillet over medium heat, heat the olive oil or avocado oil and butter. Add the chicken; cook for 4 to 5 minutes per side or until no longer pink in the center. Transfer to a serving platter; cover loosely with foil.
  4. Add the garlic-infused olive oil to the same skillet; cook and stir for 1 minute. Add the reserved 1 tablespoon of flour mixture – creating a rue; cook and stir for 1 minute. Add the broth and lemon juice; cook 2 minutes or until thickened, stirring frequently. Stir in the parsley and capers until blended. Spoon the sauce over the chicken & hit it with a little lemon zest for a bump in flavor.

Substitutions & Alterations

*If grain-free and not on a low fodmap diet, replace flour with almond flour.

**If meat-free, skip the directions for cooking the chicken and replace with grilled portobello mushrooms and or roasted cauliflower florets (SIBO & Low Fodmap be mindful because these items can cause a flare)
